I hope ya’ll are having a great week so far! It’s been a crazy week for us and I can’t seem to catch up and get one step ahead. It doesn’t help matters that I get so easily sidetracked! Â I think I need some focus or memory vitamins or something! Do they even make such a thing?
When I know we’re going to have a busy week, I like to make a big cold pasta salad that we can live on for days. I have shared our favorite chicken pasta salad in the past, but I haven’t shared my greek pasta salad recipe that is just as good and takes very little time to make. I can mix this pasta salad together in less than 20 minutes because I use a rotesserie chicken and store bought greek salad dressing. Â By the way, this is also a great salad for a party or luncheons.
So here’s the recipe:
Greek Pasta Salad
1 – 12 oz. package of bow tie pasta cooked and drained
1/2 cup finely diced green onions
2 cups shredded cooked chicken ( I use a rotisserie chicken)
1/2 cup balsamic vinegar
1 1/4 cup greek salad dressing (I prefer Ken’s)
1 cup sliced cherry tomatoes
2- 4oz packages of feta cheese
2 tablespoons of dill weed
1 teaspoon garlic powder
1- 2.25 oz. can of sliced black olives
(optional) 1-2 cups diced cucumbers
Mix the drained pasta with the dressing and balsamic first so the pasta will absorb the flavors. Â Next, add the chicken, black olives and green onions and mix well. Â Next, add the seasonings and mix well. Â Lastly, lightly toss the feta and tomatoes in the mix (I save about a half cup to sprinkle on the top for serving). The pasta will look like it’s pretty liquidy but after you chill for least 3 hours, the pasta will absorb the liquids.
This is one of those recipes that you can really tweak to your liking. Â I do not add salt or pepper because between the dressing and rotisserie chicken, I think the salt is perfect. Â When I serve it, I sprinkle a little dill on the top as well.
