Easy Greek Pasta Salad

This Greek Pasta Salad is easy and delicious. It's the perfect dish to throw together for a gathering or weeknight meal. This pasta salad is also great for customizing to your liking!

Ingredients

  • 12 oz package of bow tie pasta cooked and drained
  • ½ cup finely diced green onions
  • 2 cups shredded cooked chicken I use a rotisserie chicken
  • ½ cup balsamic vinegar
  • 1 ¼ cup greek salad dressing I prefer Ken's
  • 1 cup sliced cherry tomatoes
  • 2 4 oz packages of feta cheese
  • 2 tablespoons of dill weed
  • 1 teaspoon garlic powder
  • 2.25 oz. can of sliced black olives
  • 1-2 cups 1-2 cups diced cucumbers optional

Instructions

  • Mix the drained pasta with the dressing and balsamic first so the pasta will absorb the flavors.  
  • Next, add the chicken, black olives and green onions and mix well.  Then add the seasonings and mix well.
  •  Lastly, lightly toss the feta and tomatoes in the mix (save about a half cup to sprinkle on the top for serving).
  • The pasta will look like it's pretty liquidy but after you chill for least 3 hours, the pasta will absorb the liquids.
  • Serve and enjoy!

Notes

Ingredient Notes
  • Rotisserie chicken makes this recipe so quick and easy!
  • I prefer Ken's greek dressing to any others, but feel free to use your favorite.
Ingredient Additions
This recipe is great because you can really customize it to however you like it.  Feel free to add additional ingredients such as sliced red onion or artichoke hearts!
Or swap the black olives for kalamata olives.
