Napa Salad with Honey Mustard Vinaigrette

This flavorful Napa Salad is prepared with a homemade honey mustard vinaigrette, inspired by Mosquito Cafe's famous Champagne Dressing. This easy-to-make salad combines spring mix lettuce, chicken, bacon, avocado, blue cheese, fruits, and nuts for an incredibly satisfying meal or side dish. The versatile dressing also adds a delicious touch, that is not only perfect for salads but as a marinade or dipping sauce as well.

Ingredients

  • 1- 10 oz. Container of Spring Mix Lettuce
  • 2 Cups Cooked Chicken shredded or diced
  • 1 Cup Cooked Bacon crumbled
  • 2 Avocados sliced
  • 1 ½ Cups Crumbled Blue Cheese
  • 1 Cups Red Grapes cut in half
  • 1 Cup Strawberries sliced
  • ½ Cup Mandarin Oranges or Sliced Apples
  • 1 Cup Sugared Pecans or Walnuts
  • ½ Cup Purple Onions thinly sliced

Ingredients for Dressing

  • 2 Tablespoons White Wine Vinegar
  • ½ Cup Honey Mustard Dressing
  • ¼ Cup Italian Dressing any

Instructions

  • Mix the dressing first. Use a cruet to shake and thoroughly mix. If you do not have a cruet, use a whisk and mix for at least 2 minutes.
  • Allow the dressing sit for at least 10 minutes so the flavors can meld.
  • Next, pour the lettuce into a large bowl and toss the dressing with the lettuce.
  • Add the rest of the salad ingredients (except the avocados) and toss.
  • Top with the sliced avocados and serve immediately.

Serving
  • Serve this salad immediately for the best results.
  • You can prep all ingredients in advance for the best way to make it ahead of time but once you add the fruit, avocado, and dressing it should be consumed quickly
Ingredient Notes
  • Chicken - using rotisserie chicken makes this recipe quick and easy.
  • Honey Mustard - I prefer using Ken's Honey Mustard Dressing over anything else.
Vinaigrette Storage
  • You do not have to use all of the dressing for this recipe and can use only the amount that you like to coat your salad. Store it in an airtight container in the fridge for up to 3 days.
