I have a new obsession the last few months for these Greek chicken salad bites. I make them with feta and fresh dill on cucumber slices. Â I stumbled on this combination a couple months ago when randomly I added feta to my chicken salad. Â I know, it sounds crazy but the feta really added to chicken salad and I was so surprised with the combination. I then added fresh dill and scooped it onto cucumber slices and I have been eating it almost every day all summer. Â It’s SOOO good!
I wanted to share this recipe with you guys today because it’s perfect for those hot summer days right now when you want something light and cool. This recipe is one of those that you can adjust for anything you like. Â I have tried it with a little Greek yogurt mixed in it as well as tzatziki dip and it’s always something new a different. Â I also LOVE this chicken salad on cantaloupe (instead of cucumber slices). Â Again, something different but cool for summer.
Below is the basic recipe and really, you can make your own chicken salad the way you normally like to make it and simply add in feta and top with fresh dill and scoop on cucumber slices.
Greek Chicken Salad on Cucumber Slices (12-14 Slices)
Ingredients;
1 1/2 Â Cups Finely Shredded Chicken (I like to use store bought rotisserie chicken)
1/2 Cup Kraft Mayo
1/4 Cup Sour Cream (or substitute w/Greek Yogurt)
3 Tablespoons Feta
12-14 Small Tomato Wedges
1 teaspoon Lemon Juice or Squeezed Lemon Wedge
1/2 teaspoon Dried Thyme
1/2 teaspoon Garlic Powder
1 teaspoon Ground Pepper
Salt to taste
12-14 Cucumber Slices
Fresh Dill
Directions;
Mix all the ingredients together except the tomato, cucumber and fresh dill in a bowl. Â Mix well and chill for an hour (I like to chill it so all the flavors meld together). Â When ready to serve, scoop chicken salad onto 1/2″ cucumber slices and top with a small sprig of fresh dill and a small tomato wedge.
Again, there are so many variations here depending on what you’re in the mood to do! 🙂
